Ahi

The #1 ahi sashimi differs from the #1++ and the #1+ grade by having slightly more water content and a small decrease in red color. The color is cherry red with a semi-translucent quality. This grade of ahi sashimi offers a great value for applications that call for raw or light cooking or flash searing.
